Goitrogens

Compounds in raw cruciferous vegetables that can mildly affect the thyroid — largely deactivated by cooking.

Goitrogens are natural compounds in raw cruciferous vegetables (broccoli, kale, cabbage, cauliflower) and soy that can, in theory, interfere with thyroid hormone production. In practice the effect only matters with very large *raw* amounts, usually alongside iodine deficiency — and cooking largely deactivates them. For most people with a thyroid condition, normal cooked portions are safe and beneficial.
