Molecular mimicry

When the immune system attacks the body's own tissue because it resembles something it's reacting to.

Molecular mimicry is a proposed mechanism linking food to autoimmunity: when a protein you react to (such as gluten's gliadin) structurally resembles one of your own tissues (like the thyroid), the immune system can mistakenly attack the tissue too. It's a key reason gut and dietary triggers can influence conditions like Hashimoto's.
