Uric acid

The waste product that, at high levels, forms the crystals behind gout.

Uric acid (urate) is a waste product from breaking down purines. When blood levels stay high it can crystallise in joints and cause the pain of gout. Levels are driven more by genetics, kidney function, alcohol, fructose and insulin resistance than by purine-rich food alone.
